Blueberry blossom honey ranges from amber to dark amber, and our taste buds describe it as having a sweet, slightly tart flavor with a hint of fruitiness. Blueberry blossom honey does have a tendency to crystallize. Crystallization is the formation and growth of sugar crystals in a container of honey and is perfectly fine to use. Crystallization is a natural process and not a sign of adulteration or spoilage.
